    As its Summer and besides sipping summery G&Ts from a glistening globe glass in the sunshine & contemplating where you would like to explore on your next Irish adventure, you might like to cool down with some homemade Irish Ice-cream.

    Dingle Town

    Sean and Kieran Murphy started Murphy’s Ice Cream in Dingle, Co. Kerry in 2000, with the goal of making the best ice cream in the world. They might have bigger pots and pans 20 years later, but they still make ice cream the same way – breaking eggs and using fresh cream, milk and pure cane sugar to make a delicious custard that they flavour with fresh, natural, real ingredients.

    Here’s a delicious Dingle Gin ice cream recipe from the lovely folks at Murphy’s Ice Cream in Dingle, County Kerry!

    Two of the best summer tastes: ice cream and a chilled G&T, what’s not to love?

    Dingle Gin Ice Cream

    Dingle Gin Ice Cream.

    Ingredients:

    -1 cardamom pod

    -5 juniper berries – Lemon and orange zest to taste

    -130g sugar

    -4 egg yolks

    -240ml cream

    -200ml milk

    -60ml Dingle Gin

    Method

    -Add the Cardamon, Juniper, Lemon and orange zest to the gin and allow to sit for at least 4 hours.

    -Beat the Sugar and Egg Yolks together until thick and pale yellow.

    -Bring milk to a low simmer

    -Slowly add the milk to the egg/sugar mixture with the mixer running.

    -Pour the mixture into a saucepan and cook, stirring continuously, on low heat until it reaches 65 C. It should coat the back of a spoon.

    -Refrigerate until cold

    -Remove from the fridge pour into an ice cream maker with the cream.

    -Add the gin after about 20 minutes

    -Continue to freeze until the consistency reaches that of soft ice cream

    -Transfer to a container and put in the freezer until hard

    At present there are only two gins made in Ireland and one of these is the hand-crafted, artisan Dingle Original Gin.

    The Dingle Distillery welcomes visitors to enjoy a tour of their facility where the entire production process, for all of their products, are explained and a gin/vodka sample is provided.
